FWIW, summerbaby, I’ve upgraded the HDD on my NC10 to a 500Gb Seagate Momentus 7200.4 HDD with G-Force Protection.
Instructions for upgrading the Samsung NC10’s Hard Drive should help you install a new HDD on the N120 as it is very similar to the NC10.
While I had the box open, I also replaced the Atheros b/g wireless adapter with an Intel 5300 b/g/n wireless adapter.

Yes it should be fine. I put the travelstar 320gb hdd into my nc10 and it seems to consume a little less power than the original samsung drive – I get maybe 20-30 min more battery life
Let me second TCMuffin’s suggestion about replacing the wireless card to one that supports N while you’ve got it open (I always worry about breaking the tabs when I open these). I’ve upgraded to an Airport Extreme card and an Intel X25M SSD. The extra wireless range and speed is very nice and makes the laptop a pretty capable machine.
I happen to have one 5300 and one Airport card lying around I might be willing to part with (cheaply). But I’d like to point out that in my nordic model the wireless card was half size so it might be hard to add a full size card due to the fixing post getting in the way.
Good thing I found this thread as this was my exact question, I was thinking about upgrading the N120 to a WD 320GB HDD, I have bought 2 of these drives before to upgrade both my Laptop and PS3. Obviously upgrading the N120 will be a little bit more difficult as you have to remove the back panel, but I’m still keen to do so.
I was thinking about dual booting XP with W7, its doable with a 160GB drive but you’d have to restrict the Windows partitions to like 15-25GB each to leave the media partition at a reasonable size. Whereas with 320GB you could make them 30-60GB each and still have plenty of room left for the media partiton.
